Grinch Cookie Butter Cinnamon Rolls

Ingredients

  • 1 cup whole milk
  • 3 tsp active dry yeast
  • 0.33 cup unsalted butter
  • 1 tsp vanilla extract
  • 2 large eggs
  • 0.33 cup light brown sugar
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp green food dye
  • 0.25 cup unsalted butter
  • 0.25 cup cookie butter
  • 0.5 cup light brown sugar
  • 1 tbsp ground cinnamon
  • 0.25 cup heavy whipping cream
  • 8 oz cream cheese
  • 0.25 cup unsalted butter
  • 0.25 cup cookie butter
  • 2 cups powdered sugar
  • 1 tsp green food coloring
  • 1 as needed heart sprinkles

Instructions

  1. Heat the milk and stir in the yeast. Let it sit for 5–10 minutes to bloom.
  2. Mix the melted butter, vanilla, eggs, and brown sugar until smooth, then pour in the activated milk-yeast mixture.
  3. Add the flour, salt, and green food dye. Mix on low speed then increase to medium speed and knead for 8–10 minutes. If mixing by hand, knead on a floured surface for 10–12 minutes.
  4. Place the dough in a greased bowl. Cover and let rise in a warm area for 1–1.5 hours, or until doubled in size.
  5. In a small bowl, mix the melted butter and cookie butter until smooth; set aside.
  6. In a separate bowl, mix together the brown sugar and cinnamon; set aside.
  7. Once the dough has risen, punch it down. Flour your surface and roll the dough into a 12×18-inch rectangle.
  8. Spread the butter–cookie butter mixture evenly over the dough.
  9. Sprinkle cinnamon sugar mixture on top.
  10. Cut the dough into 12 equal strips and roll each strip into a swirl.
  11. Grease your baking dish with softened butter. Add the rolls to the dish, cover and let rise for 30–45 minutes.
  12. Preheat the oven to 350°F. Pour heavy whipping cream. Bake for 25-30 minutes.
  13. In a medium bowl, cream the cream cheese, butter, and cookie butter until smooth. Add powdered sugar and green food coloring. Continue beating until light and fluffy.
  14. Spread frosting over warm rolls, add heart sprinkles, and enjoy immediately!
