Creamy Beef Stroganoff Casserole

Ingredients

  • 0 Butter or oil
  • 12 oz egg noodles
  • 1 tbsp olive oil or butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 lb ground beef
  • 10.5 oz cream of mushroom soup
  • 1 cup sour cream
  • 0.5 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 0.5 tsp paprika
  • 0 Salt and pepper
  • 1 cup shredded mozzarella or cheddar cheese
  • 0.5 cup shredded mozzarella or cheddar cheese
  • 0 Fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. Cook egg noodles according to package directions until al dente. Drain and set aside.
  3. In a skillet, heat oil over medium heat. Sauté onion for 2–3 minutes, then add garlic and ground beef. Cook until browned and cooked through, about 6–8 minutes. Drain excess fat.
  4. Stir in soup, sour cream, beef broth, Worcestershire, mustard (if using), paprika, salt, and pepper. Simmer for 2–3 minutes.
  5. Combine the cooked noodles with the beef mixture and 1 cup of cheese. Stir until well mixed.
  6. Spread into prepared baking dish and top with remaining 1/2 cup cheese.
  7. Bake uncovered for 20–25 minutes, until bubbly and golden on top.
  8. Let rest 5–10 minutes, garnish with parsley, and serve.
