Christmas Mushroom Crepes
Christmas Mushroom Crepes inspired by my grandmother's recipe. A super practical and delicious idea for this season.

Ingredients
- 300 g flour
- 3 cups milk
- 5 eggs
- 0.5 teaspoon salt
- 150 g butter
- 3 tablespoons olive oil
- 1520 g sliced mushrooms
- 2 cloves garlic
- 0.5 onion
- 1 to taste salt and pepper
- 200 g serrano ham
- 2 cups cream
- 400 g cream cheese
- 600 g cooked spinach
- 190 g sliced mushrooms
- 2 cups cream
- 1 cup beef broth
- 1 to taste grated cheese
- 1 touch truffle oil
Instructions
- Blend the flour, eggs, salt, and milk until everything is incorporated, then melt the butter and add it to the mixture and blend.
- In a small non-stick pan over medium heat, add a little butter and add a ladle of crepe mixture, move the pan in a circle until the mixture covers the entire bottom. Flip when one side is cooked (approx 20sec) and leave the other for another 20 sec approx. Repeat until all the mixture is used.
- In a pan, brown the onion and garlic with a little olive oil and butter, add the sliced mushrooms, salt, and pepper, cook for a few minutes and reserve half of the stew for the sauce.
- Add serrano ham, followed by cream, cream cheese, and cooked spinach, mix well.
- For the sauce, blend the mushrooms, cream, and beef broth. Transfer to a pot and boil for a few minutes.
- Place a little of the filling in a crepe, roll up and repeat the process.
- In a baking dish, add a little of the sauce, on top the crepes and bathe with the sauce, cover with grated cheese and a touch of truffle oil.
- Put in the oven at 180 degrees C and bake for 25 min or until the cheese is golden.
