Roasted Goat Cheese Stuffed Dates

Ingredients

  • 12 oz pitted Medjool dates
  • 4 oz goat cheese
  • 0.33 cup finely chopped walnuts
  • 2 tsp minced fresh rosemary
  • 1 tsp orange zest
  • 2 tsp fresh orange juice
  • 0.25 tsp ground cinnamon
  • 0.25 tsp sea salt
  • 3 Tbsp extra-virgin olive oil
  • 1 drizzle hot honey

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Take 1 (12-oz.) pkg. pitted Medjool dates and cut a slit in each date.
  3. Stuff each date with 1 (4-oz.) log goat cheese.
  4. In a bowl, combine 1/3 cup finely chopped walnuts, 2 tsp. minced fresh rosemary, 1 tsp. orange zest, 2 tsp. fresh orange juice, 1/4 tsp. ground cinnamon, 1/4 tsp. sea salt.
  5. Drizzle the stuffed dates with 3 Tbsp. extra-virgin olive oil and the walnut-rosemary mixture.
  6. Place the stuffed dates in the preheated oven and roast until the cheese is melted and the dates are soft, about 15-20 minutes.
  7. Remove the dates from the oven and drizzle with hot honey for garnish before serving.
