Cozy Sweet Potato Casserole Recipe

Ingredients

  • 1 spray cooking spray
  • 2.5 lb sweet potatoes
  • 1 pot water
  • 4 Tbsp unsalted butter
  • 2 eggs large eggs
  • 0.5 cup milk
  • 0.5 cup packed light brown sugar
  • 1 tsp kosher salt
  • 0.5 tsp ground nutmeg
  • 0.25 tsp pure vanilla extract
  • 1 cup chopped toasted pecans
  • 0.5 cup all-purpose flour
  • 0.5 cup packed light brown sugar
  • 4 Tbsp unsalted butter
  • 0.5 tsp kosher salt

Instructions

  1. Preheat oven to 350° and grease a medium baking dish with cooking spray.
  2. Place sweet potatoes in a large pot and cover with water. Bring to a boil.
  3. Reduce heat to medium-low and simmer until potatoes are tender, about 15 minutes. Drain and let cool slightly. Transfer to a large bowl.
  4. Add butter to potatoes. Using a potato masher or 2 forks, mash potatoes to desired consistency.
  5. Add eggs, milk, brown sugar, salt, nutmeg, and vanilla and stir until smooth. Transfer to prepared dish.
  6. In a medium bowl, mix pecans, flour, brown sugar, butter, and salt until combined. Sprinkle topping over potatoes.
  7. Bake casserole until warmed through and golden brown on top, about 25 minutes. Serve warm.
