Cozy Sweet Potato Casserole Recipe

Ingredients
- 1 spray cooking spray
- 2.5 lb sweet potatoes
- 1 pot water
- 4 Tbsp unsalted butter
- 2 eggs large eggs
- 0.5 cup milk
- 0.5 cup packed light brown sugar
- 1 tsp kosher salt
- 0.5 tsp ground nutmeg
- 0.25 tsp pure vanilla extract
- 1 cup chopped toasted pecans
- 0.5 cup all-purpose flour
- 0.5 cup packed light brown sugar
- 4 Tbsp unsalted butter
- 0.5 tsp kosher salt
Instructions
- Preheat oven to 350° and grease a medium baking dish with cooking spray.
- Place sweet potatoes in a large pot and cover with water. Bring to a boil.
- Reduce heat to medium-low and simmer until potatoes are tender, about 15 minutes. Drain and let cool slightly. Transfer to a large bowl.
- Add butter to potatoes. Using a potato masher or 2 forks, mash potatoes to desired consistency.
- Add eggs, milk, brown sugar, salt, nutmeg, and vanilla and stir until smooth. Transfer to prepared dish.
- In a medium bowl, mix pecans, flour, brown sugar, butter, and salt until combined. Sprinkle topping over potatoes.
- Bake casserole until warmed through and golden brown on top, about 25 minutes. Serve warm.
