Chocolate No Bake Cookies

These gluten-free, dairy-free, and refined sugar-free no-bake cookies are a perfect balance of chewy, chocolatey, sweet, and salty. Ideal for the holidays when oven space is limited.

Chocolate No Bake Cookies

Ingredients

  • 0.5 cup coconut oil
  • 1.5 cups coconut sugar
  • 0.25 cup raw cacao powder
  • 0.5 cup almond milk
  • 0.25 teaspoon salt
  • 0.75 cup creamy peanut butter
  • 3 cups rolled oats
  • 2 teaspoons vanilla extract
  • 0.5 cup dairy-free chocolate chips
  • 0.5 cup dairy-free chocolate chips
  • 1 teaspoon coconut oil
  • 0 flaky sea salt

Instructions

  1. Add the 1/2 cup coconut oil, 1 1/2 cups coconut sugar, 1/4 cup raw cacao powder, 1/2 cup almond milk, and 1/4 teaspoon salt to a medium saucepan and bring to a boil.
  2. Boil the mixture for 1 minute.
  3. Remove the saucepan from the heat and add 3/4 cup creamy peanut butter, 3 cups rolled oats, and 2 teaspoons vanilla extract, stirring to incorporate.
  4. While the mixture is still warm, stir in 1/2 cup of dairy-free chocolate chips.
  5. Drop large spoonfuls of the cookie mixture onto a parchment-lined cookie sheet and flatten to your desired thickness.
  6. Refrigerate the cookies for at least an hour.
  7. Melt the remaining 1/2 cup of dairy-free chocolate chips with 1 teaspoon of coconut oil.
  8. Drizzle the melted chocolate over the top of the cookies.
  9. Sprinkle the cookies with flaky sea salt.
  10. Enjoy the cookies! Store them in the refrigerator.
