Chocolate No Bake Cookies
These gluten-free, dairy-free, and refined sugar-free no-bake cookies are a perfect balance of chewy, chocolatey, sweet, and salty. Ideal for the holidays when oven space is limited.

Ingredients
- 0.5 cup coconut oil
- 1.5 cups coconut sugar
- 0.25 cup raw cacao powder
- 0.5 cup almond milk
- 0.25 teaspoon salt
- 0.75 cup creamy peanut butter
- 3 cups rolled oats
- 2 teaspoons vanilla extract
- 0.5 cup dairy-free chocolate chips
- 0.5 cup dairy-free chocolate chips
- 1 teaspoon coconut oil
- 0 flaky sea salt
Instructions
- Add the 1/2 cup coconut oil, 1 1/2 cups coconut sugar, 1/4 cup raw cacao powder, 1/2 cup almond milk, and 1/4 teaspoon salt to a medium saucepan and bring to a boil.
- Boil the mixture for 1 minute.
- Remove the saucepan from the heat and add 3/4 cup creamy peanut butter, 3 cups rolled oats, and 2 teaspoons vanilla extract, stirring to incorporate.
- While the mixture is still warm, stir in 1/2 cup of dairy-free chocolate chips.
- Drop large spoonfuls of the cookie mixture onto a parchment-lined cookie sheet and flatten to your desired thickness.
- Refrigerate the cookies for at least an hour.
- Melt the remaining 1/2 cup of dairy-free chocolate chips with 1 teaspoon of coconut oil.
- Drizzle the melted chocolate over the top of the cookies.
- Sprinkle the cookies with flaky sea salt.
- Enjoy the cookies! Store them in the refrigerator.
