One Pot White Chicken Chili Mac And Cheese

Ingredients
- 2 tablespoons salted butter or olive oil
- 1 whole yellow onion
- 1 pound boneless skinless chicken breasts or thighs
- 4 cloves garlic
- 2 whole poblano peppers
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 0.5 teaspoon chili powder
- 0 to taste salt
- 0 to taste black pepper
- 4 cups broth
- 4 ounces cream cheese
- 1 can white beans
- 1 can diced green chilies
- 0.5 cup salsa verde
- 1 pound short cut pasta
- 2 cups shredded melty cheese
- 0 for serving green onions
- 0 for serving cilantro
Instructions
- Heat the butter or olive oil in a large pot over medium heat.
- Add the chopped yellow onion and cook until fragrant, about 5 minutes.
- Add the chicken breasts or thighs and cook until browned on all sides, about 5 minutes.
- Stir in the chopped garlic and poblano peppers, cooking for another 5 minutes.
- Add the ground cumin, smoked paprika, chili powder, salt, and black pepper, stirring to combine.
- Pour in the broth and bring to a boil.
- Reduce the heat to a simmer and stir in the cream cheese until melted and smooth.
- Add the drained white beans, diced green chilies, and salsa verde, stirring to combine.
- Stir in the pasta and cook according to package directions until al dente.
- Remove from heat and stir in the shredded cheese until melted and creamy. Serve topped with green onions and cilantro.
