Earl Grey Banana Bread

Earl Grey Banana Bread with matcha butter. Vegan and easy to make. One of my favourite flavours to jazz up the classic banana bread. It tastes even better the next day.

Earl Grey Banana Bread

Ingredients

  • 3 tbsp earl grey tea
  • 3 tbsp hot water
  • 240 g ripe banana
  • 80 g neutral oil
  • 70 g coconut or dairy-free yoghurt
  • 90 g coconut sugar
  • 50 g cane sugar
  • 1 tsp vanilla extract
  • 185 g plain flour
  • 0.75 tsp baking soda
  • 0.5 tsp baking powder
  • 1 tsp earl grey-infused milk
  • 0 icing sugar
  • 3 tbsp vegan butter
  • 1.5 tsp matcha powder
  • 0 flaky salt

Instructions

  1. Preheat oven to 160°C fan and line a loaf tin.
  2. Add the hot water to the earl grey tea from 3 teabags, set aside.
  3. Whisk the mashed banana, oil, yoghurt, coconut sugar, cane sugar, and vanilla extract together.
  4. Whisk in the earl grey mixture.
  5. Sieve in the dry ingredients (plain flour, baking soda, baking powder) and fold with a spatula until just combined, being careful not to overmix.
  6. Transfer the batter to the lined loaf tin and bake for 55-57 minutes until a toothpick inserted comes out clean.
  7. Make the glaze by adding 1 tsp earl grey-infused milk with icing sugar until thickened to your desired consistency.
  8. For the matcha butter, melt the vegan butter then sift in the matcha powder, refrigerate to set.
  9. Once cooled, slice the banana bread and enjoy warm with matcha butter and flaky salt.
