Spaghetti Carbonara
A classic Italian pasta dish made with eggs, cheese, pancetta, and pepper.

Ingredients
- 4 liters water
- 1 tablespoon salt
- 400 grams spaghetti
- 150 grams pancetta
- 4 large eggs
- 100 grams Parmesan cheese
- 1 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil.
- Add the spaghetti to the boiling water and cook until al dente, about 8-10 minutes.
- While the pasta is cooking, heat a large skillet over medium heat and add the pancetta.
- Cook the pancetta until it is crispy, about 5 minutes, then remove from heat.
- In a bowl, whisk together the eggs and grated Parmesan cheese.
- Drain the spaghetti, reserving 1 cup of the pasta water.
- Add the hot spaghetti to the skillet with the pancetta and toss to combine.
- Remove the skillet from the heat and quickly add the egg and cheese mixture, stirring constantly to create a creamy sauce.
- If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
- Season with freshly ground black pepper and serve immediately.
