Spaghetti Carbonara

Spaghetti Carbonara

Ingredients

  • 4 liters water
  • 1 tablespoon salt
  • 400 grams spaghetti
  • 150 grams pancetta
  • 4 large eggs
  • 100 grams Parmesan cheese
  • 1 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the spaghetti to the boiling water and cook until al dente, about 8-10 minutes.
  3. While the pasta is cooking, heat a large skillet over medium heat and add the pancetta.
  4. Cook the pancetta until it is crispy, about 5 minutes, then remove from heat.
  5. In a bowl, whisk together the eggs and grated Parmesan cheese.
  6. Drain the spaghetti, reserving 1 cup of the pasta water.
  7. Add the hot spaghetti to the skillet with the pancetta and toss to combine.
  8. Remove the skillet from the heat and quickly add the egg and cheese mixture, stirring constantly to create a creamy sauce.
  9. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
  10. Season with freshly ground black pepper and serve immediately.
