Apple Cinnamon Swirl Cake

Ingredients

  • 1 egg
  • 50 g yoghurt
  • 120 ml milk
  • 25 g butter melted
  • 0.5 tsp vanilla extract
  • 150 g plain flour
  • 30 g salted caramel protein powder @macr0mike
  • 50 g granulated sweetener
  • 2 tsp baking powder
  • 1 apple peeled and diced
  • 0.5 tsp cinnamon
  • 25 g butter softened
  • 30 g granulated sweetener
  • 2 tsp cinnamon
  • 0 oven preheated to 180°C
  • 40 g icing sugar
  • 1 tbsp milk

Instructions

  1. Whisk the egg, yoghurt, milk, melted butter, and vanilla extract together in a bowl.
  2. Fold in the flour, protein powder, granulated sweetener, and baking powder until just combined.
  3. Place diced apple in a bowl with cinnamon and toss to coat. Fold the apple into the cake mixture, then pour into a lined baking tin.
  4. Mix the cinnamon swirl ingredients together, dollop over the cake and use a knife to swirl into the batter.
  5. Bake at 180°C for 35 mins or until a skewer comes out with just a few crumbs.
  6. Mix the glaze ingredients together until smooth. Poke some holes in the cake while it’s still warm and drizzle the glaze on top. Allow the glaze to set for 15 mins before slicing.
