Carrot Cake Baked Oats
Carrot cake baked oats is a meal prep that is sweet, spiced and protein-packed. This recipe is inspired by @dietitianrose. Bake once, and have breakfast ready for the entire week.

Ingredients
- 2 ripe bananas
- 1 carrots
- 2 cups oats
- 30 g protein powder
- 1 tsp baking powder
- 0.5 tsp cinnamon
- 1 tbsp honey or maple syrup
- 1.5 cups milk
- 2 tbsp peanut butter
- 1 serving vanilla protein yogurt
- 1 handful extra walnuts
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Mash 2-3 ripe bananas in a bowl.
- Grate 1-2 carrots and add to the bowl.
- Add 2 cups of oats to the bowl.
- Add 30g of protein powder to the bowl.
- Add 1 tsp of baking powder, ½ tsp of cinnamon, and 1-2 tbsp of honey or maple syrup to the bowl.
- Pour 1½-2 cups of your choice of milk into the bowl.
- Add 2 tbsp of peanut butter to the bowl and mix all the ingredients together.
- Pour the mixture into a baking dish and bake in the preheated oven for about 30-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Top the baked oats with vanilla protein yogurt and extra walnuts before serving.
