Crispy Chickpea Kale Caesar Salad
A crispy, healthy twist on the traditional Caesar salad with chickpeas and nutrient-rich kale.

Ingredients
- 400 g Chickpeas drained
- 0 tbsp Olive Oil
- 0 Garlic Granules
- 0 Paprika
- 200 g Kale
- 0 tbsp Olive Oil
- 0 Salt
- 3 tbsp Yogurt
- 1 tbsp Mayonnaise
- 0.5 juice Lemon Juice from half a lemon
- 3 cloves Garlic crushed
- 35 g Parmesan
- 1 tbsp Capers
- 1 tsp Dijon Mustard
- 0 Salt
- 0 Black Pepper
- 1 Avocado
- 2 Spring Onions sliced
- 0 Olives
- 0 Parmesan Shavings
Instructions
- Drain the 400g of chickpeas and place them in a baking tray. Dab them with kitchen roll to soak up any excess moisture. Drizzle with olive oil and sprinkle with garlic granules and paprika.
- Bake the chickpeas in an oven preheated to 200C (392F) for 30 minutes. Check every 10 minutes to shake the tray and ensure even cooking.
- Wash the 200g of kale thoroughly and remove any large stalks. Place it in a large bowl, drizzle with olive oil and sprinkle with salt. Squeeze and massage the kale to soften it.
- Prepare the dressing: in a small bowl, mix together 3 tbsp of yogurt, 1 tbsp of mayonnaise, the juice of half a lemon, 3 crushed garlic cloves, 35g of parmesan, 1 tbsp of chopped capers, and 1 tsp of Dijon mustard. Season with salt and pepper to taste.
- Add the kale to the dressing bowl and coat thoroughly.
- Top the dressed kale with sliced avocado, spring onions, and olives. Add the crispy chickpeas and garnish with Parmesan shavings. Mix gently and serve.
