Cajun White Chicken Chili

Cajun White Chicken Chili

Ingredients

  • 1 tbsp olive oil or butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 0.5 tsp cumin
  • 0.5 tsp paprika
  • 0 to taste salt
  • 0 to taste black pepper
  • 4 oz diced green chilies
  • 1 lb cooked, shredded chicken
  • 15 oz white beans, drained and rinsed
  • 1 cup frozen corn
  • 3 cups chicken broth
  • 0.5 cup sour cream
  • 0.5 cup heavy cream or half-and-half
  • 0 optional shredded cheese
  • 0 optional green onions
  • 0 optional cilantro
  • 0 optional jalapeños

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and cook 3–4 minutes until softened.
  3. Add garlic and cook 1 minute more.
  4. Stir in Cajun seasoning, cumin, paprika, salt, and pepper.
  5. Add diced green chilies and cook for 1–2 minutes.
  6. Add shredded chicken, white beans, corn, and chicken broth. Stir and bring to a simmer.
  7. Simmer uncovered for 10–15 minutes to let flavors meld.
  8. Reduce heat and stir in sour cream and heavy cream until smooth and creamy.
  9. Simmer another 2–3 minutes, then taste and adjust seasoning as needed.
  10. Serve hot with your favorite toppings.
