Cajun White Chicken Chili
This white chicken chili has a little kick and a lot of comfort. It’s creamy, hearty, and packed with tender chicken, white beans, sweet corn, and warm Cajun spices.

Ingredients
- 1 tbsp olive oil or butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp Cajun seasoning
- 0.5 tsp cumin
- 0.5 tsp paprika
- 0 to taste salt
- 0 to taste black pepper
- 4 oz diced green chilies
- 1 lb cooked, shredded chicken
- 15 oz white beans, drained and rinsed
- 1 cup frozen corn
- 3 cups chicken broth
- 0.5 cup sour cream
- 0.5 cup heavy cream or half-and-half
- 0 optional shredded cheese
- 0 optional green onions
- 0 optional cilantro
- 0 optional jalapeños
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion and cook 3–4 minutes until softened.
- Add garlic and cook 1 minute more.
- Stir in Cajun seasoning, cumin, paprika, salt, and pepper.
- Add diced green chilies and cook for 1–2 minutes.
- Add shredded chicken, white beans, corn, and chicken broth. Stir and bring to a simmer.
- Simmer uncovered for 10–15 minutes to let flavors meld.
- Reduce heat and stir in sour cream and heavy cream until smooth and creamy.
- Simmer another 2–3 minutes, then taste and adjust seasoning as needed.
- Serve hot with your favorite toppings.
