Brown Sugar Glazed Sweet Potatoes

The perfect side dish that comes together so easily! They are absolutely delicious and be warned you will be eating the whole plate by yourself.

Brown Sugar Glazed Sweet Potatoes

Cook time: 40 minutes

Servings: 4

Ingredients

  • 2 lbs sweet potatoes
  • 2 tbsp olive oil
  • 0.5 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 0.25 tsp cinnamon
  • 1 pinch cayenne
  • 0.5 tsp salt
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 1 handful pomegranate seeds
  • 1 handful roasted chopped hazelnuts or walnuts
  • 1 handful minced cilantro or mint
  • 1 handful crumbled goat cheese or feta
  • 1 pinch flaky sea salt

Instructions

  1. Preheat oven to 425 degrees Fahrenheit and line a sheet pan with parchment paper.
  2. Chop sweet potatoes into even chunks.
  3. Place chopped sweet potatoes in a bowl with olive oil, garlic powder, smoked paprika, cinnamon, cayenne, and salt. Toss together to coat evenly.
  4. Spread the coated sweet potatoes out on the prepared baking sheet.
  5. Cook in the preheated oven for 25 minutes.
  6. Meanwhile, melt butter and mix with brown sugar until the sugar is dissolved.
  7. Remove the baking tray from the oven and flip the sweet potatoes.
  8. Drizzle the butter and sugar mixture all over the sweet potatoes and mix around to coat.
  9. Place the sweet potatoes back in the oven for an additional 10-15 minutes until caramelized.
  10. Add the sweet potatoes to a plate and pour the rest of the extra butter drippings on them. Sprinkle with cilantro, pomegranate seeds, roasted chopped hazelnuts, crumbled goat cheese, and a good pinch of flaky sea salt. Serve warm and enjoy!
