Chicken & Dumpling Soup

Ingredients
- 2 tbsp butter
- 1 tbsp olive oil
- 1 medium onion
- 2 whole carrots
- 2 whole celery stalks
- 3 cloves garlic
- 6 cups chicken broth
- 1 cup whole milk or heavy cream
- 1 tsp poultry seasoning
- 1 whole bay leaf
- 2 tsp salt
- 1 tsp black pepper
- 3 cups shredded chicken
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 0.25 tsp black pepper
- 0.5 tsp garlic powder
- 4 tbsp unsalted butter
- 0.75 cup buttermilk
- 2 tbsp fresh parsley
Instructions
- In a large pot, melt 2 tbsp of butter and add 1 tbsp of olive oil over medium heat.
- Add diced onion, carrots, and celery to the pot and sauté until softened.
- Add minced garlic to the pot and sauté for another minute.
- Pour in chicken broth, whole milk, poultry seasoning, bay leaf, salt, black pepper, and shredded chicken. Stir well and bring to a simmer.
- In a separate bowl, combine all-purpose flour, baking powder, salt, black pepper, and garlic powder.
- Add cubed cold unsalted butter to the flour mixture and mix until it resembles coarse crumbs.
- Pour buttermilk into the flour and butter mixture and stir until a dough forms.
- Fold in chopped fresh parsley into the dough.
- Drop spoonfuls of the dough into the simmering soup to form dumplings.
- Cover the pot and let the dumplings cook for about 15 minutes or until they are cooked through.
