Turkish-Inspired Chilli Butter Egg Salad
An intensely rich and flavourful egg salad inspired by Turkish Eggs. The recipe involves no real measurements, and encourages adjusting the ingredients to personal taste.

Ingredients
- 3 whole eggs
- 1 handful coriander
- 1 handful mint
- 1 handful spring onions
- 0 salt
- 0 pepper
- 0 paprika or chilli flakes
- 1 tbsp lime or lemon
- 0.5 cup Greek yogurt or hung curd
- 0 coriander or mint
- 2 whole garlic cloves
- 2 tbsp butter
- 2 tsp chilli flakes
- 1 tsp paprika
- 0 Greek yogurt
- 0 sesame seeds
- 0 pickled onions
- 0 toast
Instructions
- Soft-boil 3 eggs and cut them into smaller pieces.
- Mix together the cut eggs, handfuls of fresh coriander, mint and/or spring onions. Season with salt, pepper and paprika or chilli flakes. Add a squeeze of lime or lemon (about 1 tbsp).
- Prepare the herby yogurt by mixing Greek yogurt or hung curd (about 1/2 cup) with fresh coriander or mint and 2-3 cloves of minced garlic.
- Heat 2-3 tbsp of butter, 2-3 tsp of chilli flakes and 1-2 tsp of paprika for the chilli-butter. The original recipe uses Aleppo pepper flakes, but in a pinch use paprika, regular chilli flakes or gochugaru.
- Assemble the salad by layering Greek yogurt, the prepared egg salad, chilli butter, sesame seeds, and pickled onions.
- Serve as is, or spoon it on toast for a brunch worth sprinting out of bed for.
