Peppermint Bark Rice Krispies

Cook time: 20 minutes

Servings: 12

Ingredients

  • 0 parchment paper for lining
  • 1 stick unsalted butter use good quality for best flavor
  • 10 oz mini marshmallows reserve remaining for later
  • 0.5 tsp peppermint extract
  • 6 cups cocoa rice cereal
  • 1 cup mini marshmallows fresh, not melted
  • 0 parchment paper to prevent sticking while pressing
  • 0.5 cup crushed candy cane freshly crushed for best texture
  • 4 oz white chocolate preferably couverture, chopped
  • 0 white chocolate as melted in previous step
  • 1 tbsp fresh mint finely chopped, optional
  • 0 fresh mint whole leaves, optional for garnish
  • 0 powdered sugar for light dusting, optional

Instructions

  1. Prepare a 9x9-inch baking pan by lining it with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large, heavy-bottomed pot, melt butter over medium heat until it begins to foam and turn a light golden color, swirling occasionally.
  3. Add the first portion of mini marshmallows to the melted butter and stir constantly with a silicone spatula until fully melted and glossy.
  4. Take the pot off the heat. Rapidly stir in peppermint extract until fully incorporated and the mixture smells minty.
  5. Immediately add cocoa rice cereal to the pot and fold gently with a spatula until every grain is coated in the marshmallow mixture.
  6. Gently fold in the reserved mini marshmallows so they remain visible and provide pops of texture.
  7. Scrape the mixture into the lined pan. Using a piece of buttered parchment or lightly wet hands, gently press the mixture into an even layer, paying special attention to the corners.
  8. Immediately sprinkle crushed candy cane over the top while the mixture is still tacky, pressing gently to adhere.
  9. For a signature fusion touch, melt white chocolate in a microwave-safe bowl in 20-second bursts, stirring until smooth.
  10. Drizzle the melted white chocolate over the top in zigzag or artistic lines for a 'peppermint bark' effect.
  11. Optionally, sprinkle with a small amount of freshly chopped mint for color contrast and an aromatic lift.
  12. Allow the pan to cool at room temperature for at least 1 hour, or chill for 20 minutes in the fridge, until the treats are set and easy to slice.
  13. Lift the block from the pan using the parchment, then slice into even squares or rectangles with a sharp, buttered knife. Wipe the blade between cuts for a clean edge.
  14. Arrange bars artfully on a platter. Garnish with extra mint leaves or a dusting of powdered sugar for a restaurant-style finish.
