Baja Shrimp Bowl
An easy, healthy, flavor-packed dish that doesn't take too long to make. Perfect for weeknight dinner or lunch/meal prep.

Ingredients
- 0.75 cup fat free plain greek yogurt
- 0.5 cup sour cream
- 2 tbsp avocado mayo
- 1 pepper canned chipotle pepper
- 1 tbsp chipotles in adobo sauce
- 0.5 lime lime
- 2 tbsp honey
- 0 salt
- 0 garlic powder
- 2 cup shredded red cabbage
- 2 cup shredded green cabbage
- 1 cup shredded carrots
- 0.5 onion red onion
- 0.5 cup fresh chopped cilantro
- 1 lime lime
- 2 tbsp olive oil
- 2 tbsp honey
- 0 salt
- 0 garlic powder
- 1.5 lbs XL peeled & deveined shrimp
- 0 olive oil
- 2 tbsp minced garlic
- 1 tbsp chipoltes in adobo sauce
- 0 Taco/fajita seasoning
- 0 cooked jasmine rice
- 0 diced avocado
- 0 grated Cotija
- 0 fresh chopped cilantro
Instructions
- Prepare the Creamy Chipotle Lime Sauce by combining 3/4 cup fat free plain greek yogurt, 1/2 cup sour cream, 2 tbsp avocado mayo, 1 canned chipotle pepper, 1 tbsp of the chipotles in adobo sauce, juice of 1/2 a lime, 2-3 tbsp of honey, and salt and garlic powder to taste.
- Prepare the slaw by combining 2 cups shredded red cabbage, 2 cups shredded green cabbage, 1 cup shredded carrots, 1/2 red onion thinly sliced, 1/2 cup fresh chopped cilantro, juice of 1 lime, 2 tbsp olive oil, 2-3 tbsp honey, and salt & garlic powder to taste.
- Place the sauce and the slaw in the fridge until time to plate.
- Add the shrimp to a bowl. Drizzle in some olive oil, add minced garlic, seasoning and add a tbsp of chipotles in adobo sauce. Mix till well combined.
- Cook shrimp in a large greased skillet over medium-high heat for 2-3 minutes per side.
- Assemble your bowl with cooked jasmine rice, the prepared shrimp, slaw, and sauce. Add additional toppings of diced avocado, grated Cotija, and fresh chopped cilantro as desired.
