Maple Balsamic Roasted Brussel Sprouts

Ingredients
- 1 pound Brussel sprouts
- 2 tablespoon Olive oil
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 2 tablespoon Maple syrup
- 2 tablespoon Balsamic vinegar
- 1 teaspoon Dijon mustard
- 0.5 cup Dried cranberries
- 0.5 cup Goat cheese
- 0.5 cup Pecans
Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- Clean and trim the brussel sprouts, then cut them in half.
- Toss the brussel sprouts in olive oil, salt, and pepper, then spread them out on a baking sheet.
- Roast the brussel sprouts in the preheated oven for about 20 minutes, or until they are crispy and browned.
- While the brussel sprouts are roasting, prepare the maple-balsamic sauce by whisking together the maple syrup, balsamic vinegar, and Dijon mustard.
- Remove the brussel sprouts from the oven and toss them in the maple-balsamic sauce.
- Add the dried cranberries, crumbled goat cheese, and chopped pecans to the brussel sprouts and toss to combine.
- Serve the brussel sprouts immediately, while they are still warm.
