High Protein Chicken Alfredo Pizza

Ingredients

  • 1 large egg
  • 1 cup cottage cheese
  • 1.5 cups almond flour
  • 0.5 cup parmesan cheese
  • 0.125 tsp xanthan gum
  • 0.125 tsp salt
  • 0.125 tsp oregano
  • 0.125 tsp garlic powder
  • 1 as needed chicken breasts
  • 1 as needed avocado oil
  • 3 tbsp unsalted butter
  • 0.67 cup heavy cream
  • 0.25 cup parmesan cheese
  • 0.25 tsp thyme
  • 0.5 tsp salt
  • 1 as needed Alfredo sauce
  • 1 as needed mozzarella cheese
  • 1 as needed red onion
  • 1 as needed chopped chicken
  • 1 as needed spinach
  • 1 as needed parsley

Instructions

  1. Start by blending the egg and cottage cheese until smooth.
  2. In a bowl, combine all the other pizza dough ingredients and mix with the blended egg and cottage cheese until well incorporated. This will form a soft and sticky dough. Let it rest in the refrigerator to make it easier to handle.
  3. Meanwhile, prepare the Alfredo sauce. In a high-sided skillet, heat avocado oil and sauté chopped chicken breast until cooked through. Remove the chicken and set aside.
  4. Reduce the heat and add butter to the skillet. Deglaze the pan to incorporate the chicken flavors.
  5. Add heavy cream, parmesan cheese, thyme, and salt. Stir constantly to prevent sticking and to form a smooth cream without lumps. You’ll get a rich, thick sauce.
  6. On a baking sheet lined with parchment paper, flatten the pizza dough into a circular shape, resembling a classic pizza.
  7. Bake at 400F for 20-25 minutes, or until lightly golden.
  8. Spread a generous amount of Alfredo sauce over the baked crust. Top with mozzarella cheese, chopped red onion, chopped chicken, and a little chopped spinach.
  9. Bake for another 15 minutes, or until the cheese is bubbly and toasted. Finish by broiling for 2 minutes for extra crispiness. Garnish with fresh chopped parsley.
