Cook time: 45 minutes
Servings: 4
Ingredients
- 1.5 pounds small red potatoes, scrubbed and halved
- 4 tablespoons unsalted butter, melted
- 0.33 cup finely grated Parmesan cheese
- 1 tablespoon ranch seasoning mix
- 1 teaspoon herbes de Provence
- 1 teaspoon Italian seasoning
- 0 Kosher salt
- 1.5 pounds small red potatoes, scrubbed and halved
Instructions
- Preheat the oven to 425°F.
- Pat the halved potatoes dry. Using a small, sharp knife, score the cut sides in a shallow crosshatch pattern without cutting through the potatoes.
- In a small bowl, stir together the melted butter, Parmesan, ranch seasoning, herbes de Provence, Italian seasoning, and kosher salt to taste.
- Spread the Parmesan mixture evenly over the bottom of a 9-by-13-inch baking dish.
- Arrange the potatoes cut side down in a single layer, pressing gently into the mixture.
- Roast for 35–45 minutes, until the potatoes are easily pierced with a fork and the Parmesan underneath is golden brown. Begin checking after 30 minutes, as smaller potatoes may cook faster.
- Let stand for 5 minutes.
- Slide a thin spatula underneath the potatoes to release the crust.
- Serve with the Parmesan-crusted sides facing up.
