Sheet Pan Gnocchi with Spicy Chicken Sausage and Whipped Ricotta

Cook time: 30 minutes

Servings: 4

Ingredients

  • 1 lb. winter squash (honeynut, butternut, or Delicata)
  • 3 medium shallots
  • 0 extra-virgin olive oil
  • 0 grated Parmesan
  • 1.5 Tbsp. fresh rosemary or thyme (or a mix of both)
  • 1 tsp. granulated garlic
  • 16 oz. DeLallo Potato Gnocchi
  • 1 lb. uncooked Italian chicken or turkey sausage links
  • 0 extra-virgin olive oil
  • 1 cup whole milk or part-skim ricotta
  • 2 heaping cups baby arugula
  • 3 Tbsp. shaved Parmesan
  • 0 DeLallo Modenacrem Balsamic Glaze

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut 1 lb. of winter squash into cubes. You can use honeynut, butternut, or Delicata squash.
  3. Slice 3 medium shallots into thin rings.
  4. On a sheet pan, toss the squash and shallots with extra-virgin olive oil, grated Parmesan, and 1 1/2 Tbsp. of finely chopped fresh rosemary or thyme (or a mix of both), and 1 tsp. of granulated garlic.
  5. Add 1 (16-oz.) package of DeLallo Potato Gnocchi to the sheet pan.
  6. Remove the casing from 1 lb. of uncooked Italian chicken or turkey sausage links and break the sausage into bite-sized pieces. Add to the sheet pan.
  7. Drizzle everything on the sheet pan with more olive oil and toss to coat. Spread into an even layer.
  8. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the gnocchi is crispy and golden, and the squash is tender.
  9. While the sheet pan is roasting, whip 1 cup of whole milk or part-skim ricotta until smooth and creamy.
  10. To serve, spread the whipped ricotta on plates. Top with the roasted gnocchi, squash, and sausage mixture. Add 2 heaping cups of baby arugula and 3 to 4 Tbsp. of shaved Parmesan. Drizzle with DeLallo Modenacrem Balsamic Glaze. Optionally, garnish with pomegranate seeds.
