Gooey Pecan Pie Bars

Ingredients
- 16 tbsp unsalted butter
- 0.75 cup light brown sugar
- 2.5 cup flour
- 1 tbsp cinnamon
- 1 tsp salt
- 0 parchment paper
- 8 tbsp unsalted butter
- 1 cup light brown sugar
- 0.33 cup honey
- 3 tbsp heavy cream
- 1 tsp vanilla extract
- 2.25 cup chopped pecans
- 0 whipped cream optional
- 0 vanilla ice-cream optional
Instructions
- Preheat oven to 350 degrees F.
- In a large mixing bowl, cream together the butter and brown sugar.
- Add in flour, cinnamon, and salt, then beat until the mixture reaches a crumble texture.
- Press the shortbread crust evenly into a 9x9 baking dish lined with parchment paper and bake for 15 minutes.
- Remove the crust from the oven and set aside.
- To make pecan pie filling, melt butter in a medium saucepan or skillet over medium heat.
- Add in brown sugar, honey, heavy cream, and vanilla extract. Stir for a couple of minutes until mixed well.
- Stir in the chopped pecans and mix for another minute, then pour the pecan filling over the baked crust.
- Put the dish back in the oven for another 15-20 minutes.
- Remove from oven and let cool completely.
- Slice and enjoy! Optionally serve with whipped cream or vanilla ice-cream.
