Gooey Pecan Pie Bars

Ingredients

  • 16 tbsp unsalted butter
  • 0.75 cup light brown sugar
  • 2.5 cup flour
  • 1 tbsp cinnamon
  • 1 tsp salt
  • 0 parchment paper
  • 8 tbsp unsalted butter
  • 1 cup light brown sugar
  • 0.33 cup honey
  • 3 tbsp heavy cream
  • 1 tsp vanilla extract
  • 2.25 cup chopped pecans
  • 0 whipped cream optional
  • 0 vanilla ice-cream optional

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl, cream together the butter and brown sugar.
  3. Add in flour, cinnamon, and salt, then beat until the mixture reaches a crumble texture.
  4. Press the shortbread crust evenly into a 9x9 baking dish lined with parchment paper and bake for 15 minutes.
  5. Remove the crust from the oven and set aside.
  6. To make pecan pie filling, melt butter in a medium saucepan or skillet over medium heat.
  7. Add in brown sugar, honey, heavy cream, and vanilla extract. Stir for a couple of minutes until mixed well.
  8. Stir in the chopped pecans and mix for another minute, then pour the pecan filling over the baked crust.
  9. Put the dish back in the oven for another 15-20 minutes.
  10. Remove from oven and let cool completely.
  11. Slice and enjoy! Optionally serve with whipped cream or vanilla ice-cream.
