Tortellini Soup
A comforting and creamy soup filled with tender tortellini, perfect for warming up as the seasons change.

Ingredients
- 2 tablespoons olive oil
- 4 rashers bacon chopped
- 1 white onion finely chopped
- 1 carrot finely chopped
- 1 stick celery finely chopped
- 2 garlic cloves minced
- 0.5 teaspoon salt
- 0.5 teaspoon black pepper
- 1 tablespoon tomato purée heaped
- 0.5 teaspoon mixed herbs
- 0.5 teaspoon paprika
- 100 milliliters white wine
- 1 tablespoon plain flour heaped
- 1000 milliliters vegetable stock
- 150 milliliters double cream
- 300 grams cheese and tomato tortellini or your choice
- 0 to taste parmesan cheese grated
- 0 to taste fresh herbs chopped
- 0 to taste black pepper
Instructions
- Heat olive oil in a pan, add the chopped bacon, and cook for a few minutes before adding the finely chopped onion, carrot, garlic, and celery. Continue to cook for 5 minutes until the vegetables have softened.
- Season with salt and pepper, then add the tomato purée, mixed herbs, and paprika. Cook for a few minutes before pouring in the wine.
- Once the wine has cooked away, stir in the flour.
- Pour in half of the stock, let it absorb, then pour in the rest. Bring to a boil and then simmer for 10 minutes.
- Stir in the cream and add the tortellini. Cover and cook as per the packet instructions, approximately 3 minutes.
- Spoon into serving dishes and top with grated parmesan, fresh herbs, and additional black pepper. Enjoy!
