Tortellini Soup

Ingredients

  • 2 tablespoons olive oil
  • 4 rashers bacon chopped
  • 1 white onion finely chopped
  • 1 carrot finely chopped
  • 1 stick celery finely chopped
  • 2 garlic cloves minced
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon tomato purée heaped
  • 0.5 teaspoon mixed herbs
  • 0.5 teaspoon paprika
  • 100 milliliters white wine
  • 1 tablespoon plain flour heaped
  • 1000 milliliters vegetable stock
  • 150 milliliters double cream
  • 300 grams cheese and tomato tortellini or your choice
  • 0 to taste parmesan cheese grated
  • 0 to taste fresh herbs chopped
  • 0 to taste black pepper

Instructions

  1. Heat olive oil in a pan, add the chopped bacon, and cook for a few minutes before adding the finely chopped onion, carrot, garlic, and celery. Continue to cook for 5 minutes until the vegetables have softened.
  2. Season with salt and pepper, then add the tomato purée, mixed herbs, and paprika. Cook for a few minutes before pouring in the wine.
  3. Once the wine has cooked away, stir in the flour.
  4. Pour in half of the stock, let it absorb, then pour in the rest. Bring to a boil and then simmer for 10 minutes.
  5. Stir in the cream and add the tortellini. Cover and cook as per the packet instructions, approximately 3 minutes.
  6. Spoon into serving dishes and top with grated parmesan, fresh herbs, and additional black pepper. Enjoy!
