Garlic Butter Honey Pepperoni Pizza Burritos
All the best bits of a pizza wrapped up in a burrito and toasted until golden with a brush of garlic butter. Perfect for when you need something quick & easy for a weeknight.

Ingredients
- 8 slices pizza pepperoni
- 225 g chicken breast
- 1 pinch salt
- 1 pinch pepper
- 0.5 red onion
- 0.5 red pepper
- 1 tbsp tomato puree
- 1 tsp oregano
- 0.25 tsp paprika
- 0.5 tsp garlic granules
- 0.5 tsp onion granules
- 1 pinch chilli flakes
- 125 g passata
- 15 g honey
- 1 tbsp hot sauce
- 2 tortilla wraps
- 85 g reduced fat mozzarella
- 10 g lighter butter spread
- 0.5 tsp chopped garlic
- 2 sprigs fresh coriander
Instructions
- Fry the pepperoni pieces until crisp around the edges. Remove leaving behind the oils and set aside.
- In the same pan, add the diced chicken. Season with salt and pepper, then fry until cooked through.
- Add the red onion and red pepper to the pan and sauté until softened.
- Stir in the tomato purée, season with the oregano, paprika, garlic granules, onion granules, and chilli flakes and pour in the passata. Simmer until slightly thickened.
- Stir in the honey and hot sauce and remove from heat.
- Preheat a large dry frying pan. Optional - warm the tortillas in the microwave on full power for 10 seconds to make them pliable.
- Add the mozzarella, along with the pepperoni. Top with the chicken filling before folding in the sides and rolling into a burrito.
- Toast the burritos seam-side down for 2-3 minutes per side until golden.
- Melt the butter in a small bowl with the chopped garlic in the microwave on a short blast, stir through the parsley. Brush over the tops of the burritos and flip for a final 30 seconds.
- Remove and slice in half before serving.
