Garlic and Gruyere Mash

Cook time: 30 minutes

Servings: 4

Ingredients

  • 3 lb Yukon gold potatoes
  • 2 tbsp butter
  • 2 cups heavy cream
  • 1 bay leaf
  • 1 sprig thyme
  • 1 shallot
  • 1 clove garlic
  • 6 tbsp butter
  • 6 oz shredded gruyere cheese
  • 0 salt
  • 0 white pepper
  • 0 chives

Instructions

  1. Boil the Yukon gold potatoes until they are completely tender.
  2. Mash the boiled potatoes with a couple tablespoons of butter.
  3. Wipe out the pot used to boil the potatoes and place it back on the stove with the mashed potatoes inside.
  4. In a separate pot, add heavy cream, bay leaf, thyme, shallot, and grated garlic. Place over medium-low heat and steep for 15 minutes, ensuring small bubbles form around the edges but not a simmer.
  5. Turn the heat on the mashed potatoes to medium-low and warm them up.
  6. Work in the remaining butter into the warmed mashed potatoes.
  7. Add the infused heavy cream incrementally to the mashed potatoes until you achieve the desired consistency.
  8. Turn off the heat and fold in the shredded gruyere cheese.
  9. Taste the mashed potatoes and season with salt and white pepper to your liking.
  10. Serve the mashed potatoes topped with chives.
