Sweet Potato Casserole
A delicious sweet potato casserole with a streusel topping and a layer of mini marshmallows, perfect for Thanksgiving sides.

Ingredients
- 3 cups sweet potato
- 2 large eggs
- 0.5 cup brown sugar
- 0.5 cup melted butter
- 1 tsp vanilla bean paste
- 1 splash vanilla extract
- 2 tsp ground cinnamon
- 1 pinch salt
- 3 cups mashed sweet potatoes
- 0.5 cup all-purpose flour
- 0.5 cup brown sugar
- 0.5 cup chopped pecans
- 4 tbsp melted butter
- 1 pinch salt
- 1 spray nonstick spray
- 1 bowl sweet potato mixture
- 1 layer mini marshmallows
- 1 sprinkle streusel topping
Instructions
- Wrap each sweet potato in foil and bake at 400°F for about 1 hour, or until fork tender. Let them cool slightly, then peel and mash. You’ll need about 3 cups total.
- In a large mixing bowl, whisk together the eggs, brown sugar, melted butter, vanilla bean paste, vanilla extract, cinnamon, and a pinch of salt.
- Add your mashed sweet potatoes into the bowl and mix with a hand mixer until smooth and fluffy.
- In a separate bowl, combine the flour, brown sugar, chopped pecans, salt, and melted butter. Stir until it forms a crumbly texture.
- Spray a 2.5qt baking dish with nonstick spray. Spread the sweet potato mixture evenly in the dish.
- Add a layer of mini marshmallows on top, then sprinkle the streusel topping over the marshmallows.
- Bake at 375°F for 25 minutes, or until the topping is golden and the marshmallows are melted and lightly toasted.
- Let it cool for a few minutes before serving. The marshmallows will be perfectly gooey, and the topping adds that perfect crunch.
