Cook time: 30 minutes

Servings: 4

Ingredients

  • 0 homemade enchilada sauce
  • 0 Crock Pot
  • 0 soup ingredients
  • 0 chicken
  • 0 Costco rotisserie chicken
  • 0 guacamole
  • 0 chips
  • 0 cream cheese
  • 0 sour cream

Instructions

  1. Prepare the homemade enchilada sauce as it makes a huge difference in the flavor of the soup.
  2. In a Crock Pot, combine the enchilada sauce with the rest of the soup ingredients.
  3. Add the chicken to the Crock Pot. You can use a Costco rotisserie chicken, using only the white meat.
  4. Cook the soup in the Crock Pot until all ingredients are well combined and heated through.
  5. Taste the soup and adjust the seasoning if necessary. Many find that no additional spices are needed.
  6. Serve the soup hot, optionally paired with guacamole and chips.
  7. If desired, switch out the cream cheese for sour cream as a variation.
  8. Enjoy the soup with your family and friends. It is a crowd-pleaser and even picky eaters love it.
  9. Store any leftovers in the freezer as the soup freezes really well.
  10. Reheat the soup on the stove or in the microwave when ready to eat again.
