- 1 pound lean ground beef
- 0.25 teaspoon kosher salt
- 3 garlic cloves, minced
- 0.25 cup low-sodium tamari (or soy sauce)
- 1.5 cups chicken stock
- 2 teaspoons brown sugar
- 6 ounces ramen noodles, flavoring packets discarded or saved for another use
- 9 ounces slaw mix
- 1 cup shredded carrots
Instructions
- Heat 2 teaspoons of olive oil in a large skillet over medium-high heat.
- Add 1 pound of lean ground beef to the skillet and season with ¼ teaspoon of kosher salt. Cook until the beef is browned, breaking it apart with a spoon as it cooks.
- Add 3 minced garlic cloves to the skillet and cook for 1 minute, stirring frequently.
- Pour in ¼ cup of low-sodium tamari (or soy sauce) and 1 ½ cups of chicken stock. Stir to combine.
- Add 2 teaspoons of brown sugar and stir until dissolved.
- Bring the mixture to a boil, then reduce the heat to a simmer.
- Add 2 (3-oz) packages of ramen noodles to the skillet, discarding or saving the flavoring packets for another use. Cook the noodles according to package instructions, usually about 3-4 minutes.
- Stir in 9 ounces of slaw mix (about 4 cups) and 1 cup of shredded carrots. Cook until the vegetables are tender, about 3-4 minutes.
- Mix everything well to ensure the noodles and vegetables are coated with the sauce.
- Serve the Ground Beef Ramen Noodles hot, garnished with additional toppings if desired.
