Creamy Potsticker Soup

Creamy Potsticker Soup

Ingredients

  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 whole leek
  • 1 quart chicken broth
  • 1 whole garlic clove
  • 1 inch ginger
  • 2 tablespoons red curry paste
  • 1 tablespoon miso
  • 2 cans coconut milk
  • 4 ounces shiitake mushrooms
  • 0.5 cup shredded carrots
  • 1 bag potstickers
  • 1 bunch green onions
  • 1 to taste chili crisp

Instructions

  1. In a large pot, heat the sesame oil and olive oil.
  2. Add the sliced leek to the pot and saute until softened.
  3. Add the chicken broth, sliced garlic, sliced ginger, red curry paste, and miso to the pot. Bring the mixture to a boil.
  4. Simmer the mixture for about 10 minutes.
  5. Using a slotted spoon, remove the garlic and ginger from the pot.
  6. Add the coconut milk, sliced shiitake mushrooms, and shredded carrots to the pot. Bring the mixture back to a boil.
  7. Add the potstickers to the pot and cook for about 6-8 minutes.
  8. Top the soup with sliced green onions and chili crisp before serving.
