Creamy Potsticker Soup
A quick and easy one pot meal perfect for the cold weather months. A creamy soup with dumplings that can be prepared in just minutes.

Ingredients
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- 1 whole leek
- 1 quart chicken broth
- 1 whole garlic clove
- 1 inch ginger
- 2 tablespoons red curry paste
- 1 tablespoon miso
- 2 cans coconut milk
- 4 ounces shiitake mushrooms
- 0.5 cup shredded carrots
- 1 bag potstickers
- 1 bunch green onions
- 1 to taste chili crisp
Instructions
- In a large pot, heat the sesame oil and olive oil.
- Add the sliced leek to the pot and saute until softened.
- Add the chicken broth, sliced garlic, sliced ginger, red curry paste, and miso to the pot. Bring the mixture to a boil.
- Simmer the mixture for about 10 minutes.
- Using a slotted spoon, remove the garlic and ginger from the pot.
- Add the coconut milk, sliced shiitake mushrooms, and shredded carrots to the pot. Bring the mixture back to a boil.
- Add the potstickers to the pot and cook for about 6-8 minutes.
- Top the soup with sliced green onions and chili crisp before serving.
