Christmas Sugar Cookie Bars
Christmas sugar cookie bars with a cream cheese frosting, topped with Christmas sprinkles

Ingredients
- 12 tbsp softened butter
- 1 cup granulated sugar
- 2 eggs
- 1.5 tsp vanilla extract
- 2.5 cups AP flour
- 1 tsp Himalayan salt
- 0.75 tsp regular salt
- 1 tsp baking powder
- 1 tsp cornstarch
- 1 to taste Christmas sprinkles
- 4 oz softened cream cheese
- 4 tbsp softened butter
- 1.5 cups powdered sugar
- 0.25 tsp Himalayan salt
- 1 tsp vanilla extract
- 1 to taste Christmas sprinkles
Instructions
- Preheat oven to 350°F, line 8x8 or similar sized pan with parchment paper
- Beat 12 tbsp of softened butter and 1 cup of granulated sugar until light and fluffy
- Add 2 eggs and 1.5 tsp of vanilla extract
- Whisk together 2.5 cups of AP flour, 1 tsp of Himalayan salt or 3/4 tsp of regular salt, 1 tsp of baking powder, and 1 tsp of cornstarch
- Combine wet and dry ingredients. Add Christmas sprinkles. Don’t overmix
- Bake for 30 minutes. Check at 20 minutes. If you like your cookies a bit undercooked, check them after 20-25 minutes
- For frosting, mix 4 oz of softened cream cheese, 4 tbsp of softened butter, 1.5-2 cups of powdered sugar, 1/4 tsp of Himalayan salt, and 1 tsp of vanilla extract together with a handheld mixer. Add a bit of milk if mixture is too dry or add a bit more powdered sugar if mixture is too runny
- Put frosting on sugar cookies only after cookies are done cooling. Top with sprinkles and enjoy
