Baked Alaska
This show-stopping dessert combines cake, ice cream, and a golden meringue shell. It's a dramatic centerpiece that's surprisingly simple to make with some planning!
Cook time: 5 minutes
Servings: 8
Ingredients
- 1 quart vanilla ice cream or your preferred flavor
- 1 quart chocolate ice cream or other complementary flavor
- 1 layer sponge cake about 9 inches in diameter, 1 inch thick
- 4 large egg whites
- 0.5 cup granulated sugar
- 0.25 teaspoon cream of tartar
- 0.5 teaspoon vanilla extract
Instructions
- Line a 2.5-quart bowl with plastic wrap, leaving excess overhang for easy removal.
- Soften one flavor of ice cream slightly and press it into the bottom and up the sides of the bowl to form an even layer. Freeze for 15-20 minutes to firm up.
- Add the second flavor of ice cream, smoothing it to fill the bowl completely. Freeze for at least 4 hours, or until very firm.
- Trim the sponge cake layer to fit the diameter of the bowl.
- Remove the bowl of ice cream from the freezer. Use the plastic wrap to lift the ice cream dome out of the bowl and invert it onto the sponge cake base. Peel off the plastic wrap.
- Place the assembled dessert on a baking sheet and freeze while preparing the meringue.
- In a clean mixing bowl, beat egg whites and cream of tartar with an electric mixer on medium speed until frothy. Gradually add sugar, one tablespoon at a time, while increasing the speed to high. Beat until stiff, glossy peaks form. Mix in vanilla extract.
- Remove the ice cream and cake from the freezer. Working quickly, spread the meringue evenly over the entire surface, making sure to seal it completely to the cake base. Use the back of a spoon or a spatula to create decorative swirls and peaks in the meringue.
- Preheat your oven to 500°F (260°C). Bake the assembled dessert for 3-5 minutes, or until the meringue is golden brown. Watch closely to avoid over-browning.
- Slice and serve immediately for a dramatic and delicious dessert.
