Colossal Crème Brûlée

This oversized crème brûlée is far easier to make than individual ones. The crackly top is created from sugar caramelized with a blowtorch, not a broiler.

Colossal Crème Brûlée

Ingredients

  • 0 cups water for water bath
  • 3 cups heavy cream
  • 1 Tbsp vanilla bean paste or vanilla extract
  • 0.75 cup granulated sugar
  • 8 pieces egg yolks
  • 1.25 tsp kosher salt
  • 0.19 cup granulated sugar remaining for topping

Instructions

  1. Preheat oven to 325°F. Bring water to a boil for a water bath.
  2. Set a 2-qt. ceramic or glass baking dish inside a larger baking dish.
  3. Heat cream, vanilla, and 3/4 cup sugar in a saucepan over medium heat.
  4. Whisk egg yolks and salt; stream in cream mixture. Strain custard into dish.
  5. Pour boiling water into the larger dish; transfer to oven. Bake until edges are set but center wobbles, about 35-40 minutes.
  6. Chill until firm, at least 4 hours. Remove from water bath.
  7. Sprinkle remaining sugar and caramelize with a torch until deep amber.
