Colossal Crème Brûlée
This oversized crème brûlée is far easier to make than individual ones. The crackly top is created from sugar caramelized with a blowtorch, not a broiler.

Ingredients
- 0 cups water for water bath
- 3 cups heavy cream
- 1 Tbsp vanilla bean paste or vanilla extract
- 0.75 cup granulated sugar
- 8 pieces egg yolks
- 1.25 tsp kosher salt
- 0.19 cup granulated sugar remaining for topping
Instructions
- Preheat oven to 325°F. Bring water to a boil for a water bath.
- Set a 2-qt. ceramic or glass baking dish inside a larger baking dish.
- Heat cream, vanilla, and 3/4 cup sugar in a saucepan over medium heat.
- Whisk egg yolks and salt; stream in cream mixture. Strain custard into dish.
- Pour boiling water into the larger dish; transfer to oven. Bake until edges are set but center wobbles, about 35-40 minutes.
- Chill until firm, at least 4 hours. Remove from water bath.
- Sprinkle remaining sugar and caramelize with a torch until deep amber.
