One Pot Creamy Broccoli Pasta

Ingredients
- 1 tbsp olive oil or butter
- 2 cloves garlic
- 2 cups small shell pasta
- 3 cups broccoli florets
- 3 cups vegetable or chicken broth
- 1 cup milk
- 0.5 tsp onion powder
- 0 to taste salt
- 0 to taste pepper
- 1 cup shredded cheddar cheese
- 0.25 cup grated Parmesan cheese
- 2 tbsp cream cheese
- 0 optional crushed red pepper
- 0 optional lemon zest
Instructions
- In a large pot or deep skillet, heat olive oil or butter over medium heat. Add garlic and cook for 1 minute until fragrant.
- Add the uncooked pasta, broccoli, broth, milk, onion powder, salt, and pepper. Stir to combine.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
- Stir in cheddar, Parmesan, and cream cheese (if using) until melted and creamy.
- Taste and adjust seasoning as needed. Let it sit for a minute or two to thicken before serving.
- Garnish with red pepper flakes or lemon zest if you like a little kick or brightness.
