Garlic Chicken Tikka Slider Buns

Ingredients

  • 400 g chicken cubed
  • 1 tbsp garam masala
  • 50 g tikka paste
  • 40 g fat free natural yoghurt
  • 1 tbsp lemon juice
  • 2 tsp garlic chopped
  • 1 tsp ginger puree
  • 1 medium red onion diced
  • 50 g lighter mayo
  • 1 tsp garlic granules
  • 1 tsp lemon juice
  • 0.1 tsp salt
  • 4 units brioche buns
  • 4 slices mozzarella
  • 4 sprigs coriander chopped
  • 10 g light butter
  • 1 tsp garlic chopped

Instructions

  1. In a bowl, add 400g of cubed chicken. Season with 1 tablespoon of garam masala, 50g tikka paste, 40g fat free natural yoghurt, and 1 tablespoon lemon juice. Stir well and leave to marinate as long as possible.
  2. In a large frying pan, add 2 teaspoons chopped garlic and 1 teaspoon ginger puree followed by the marinated chicken. Fry for 10 minutes or so until cooked through.
  3. Add diced red onion to the pan and fry for an additional minute.
  4. Whilst the chicken cooks, make the garlic mayo by combining 50g lighter mayo, 1 teaspoon garlic granules, 1 teaspoon lemon juice, and a pinch of salt. Set aside.
  5. Preheat the oven to 180 degrees Celsius. While it heats, lightly toast the bottoms of the 4 brioche buns.
  6. Place toasted buns on a baking tray and top each with a mozzarella slice, followed by chicken mixture, garlic mayo, and chopped coriander. Bake for 5-10 minutes until the cheese has melted.
  7. Melt 10g of light butter with 1 teaspoon chopped garlic in the microwave, stirring to combine. Once the sliders are cooked, brush over the garlic butter and scatter over any remaining coriander.
