Sticky Sesame Cashew Chicken

Sticky Sesame Cashew Chicken

Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken breasts
  • 0 salt
  • 0 pepper
  • 1 tablespoon olive oil
  • 2 cups broccoli florets
  • 1 red bell pepper
  • 1 cup snow peas
  • 4 tablespoons low sodium soy sauce
  • 3 tablespoons peanut butter
  • 2 tablespoons honey
  • 1 teaspoon sesame oil
  • 1 tablespoon grated ginger
  • 0 chicken
  • 3 cloves garlic
  • 0.33 cup unsalted cashews
  • 0 sauce
  • 4 green onions
  • 2 teaspoons toasted sesame seeds
  • 0 rice

Instructions

  1. Over medium heat, add 1 tablespoon of olive oil to a large skillet. Once hot, add chicken, salt, and pepper to taste. Cook until lightly browned, about 5 minutes. Transfer to a plate and set aside.
  2. Add another tablespoon of olive oil to the pan along with broccoli, bell pepper, and snow peas. Cook until tender, stirring frequently.
  3. For the sauce, whisk together all sauce ingredients in a small bowl. Add a splash of water if a thinner consistency is preferred.
  4. Add chicken back to the pan along with minced garlic and mix together.
  5. Add cashews to the pan and pour the sauce over the top. Mix well and bring to a boil.
  6. Lower the heat and simmer until the sauce has thickened.
  7. Sprinkle with chopped green onions and toasted sesame seeds.
  8. Serve over rice for the coziest dinner.
