Miso Ginger & Orange Chuck Roast

Miso Ginger & Orange Chuck Roast

Ingredients

  • 0.5 cup orange juice
  • 0.5 cup low sodium soy sauce
  • 3 tbsp white miso paste
  • 3 tbsp ginger paste
  • 2 tbsp honey or maple syrup or brown sugar
  • 2 tbsp rice vinegar
  • 4 cloves garlic
  • 1 tsp ground black pepper
  • 1 tsp red chili flakes
  • 3.5 lbs chuck roast
  • 3.5 lbs chuck roast

Instructions

  1. Preheat oven to 325°F.
  2. In a medium bowl, whisk together orange juice, low sodium soy sauce, white miso paste, ginger paste, honey or maple syrup or brown sugar, rice vinegar, mashed garlic, ground black pepper, and red chili flakes to make the marinade.
  3. Pat dry the chuck roast.
  4. Place the chuck roast in a dutch oven.
  5. Pour the marinade on top of the chuck roast and flip the meat a few times to coat it well.
  6. Cover the dutch oven with a lid and place it in the preheated oven.
  7. Cook the chuck roast in the oven for 3 1/2 to 4 hours.
  8. At the 3 1/2 hour mark, check the meat. Use two forks to pull the meat apart. If it’s not easily shredding, return it to the oven for an additional 30 minutes.
  9. Once the meat is ready, remove it from the oven, shred all the meat and toss with the juices.
  10. If desired, place the pot back in the oven under the broiler on high for 3-4 minutes to brown the meat for crispy bits. Remove and enjoy.
