Thai Inspired Pasta Salad

Ingredients
- 10 oz chickpea pasta
- 0 water for boiling
- 1 bell pepper chopped
- 1 cup cucumber chopped
- 0.5 cup carrots shredded
- 0.33 cup green onions diced
- 1 cup cabbage chopped
- 0.5 cup peanut butter
- 1 tbsp maple syrup
- 1 tsp apple cider vinegar
- 1 tbsp coconut aminos or soy sauce
- 0.25 cup water
- 10 oz chickpea pasta cooked and cooled
- 3.33 cups mixed vegetables prepared as per ingredients list
- 0.75 cup thai-inspired sauce prepared
Instructions
- Cook the chickpea pasta according to the package instructions. Rinse with cold water and let it cool.
- While the pasta cooks and cools, chop a bell pepper, cucumber, and cabbage. Shred the carrots and dice the green onions.
- In a small bowl, combine peanut butter, maple syrup, apple cider vinegar, coconut aminos or soy sauce, and water. Whisk until smooth.
- Combine the cooled pasta, chopped veggies, and sauce in a large bowl. Toss everything together until well combined.
