Creamy Cauliflower Gnocchi with Chicken Sausage & Spinach
This low-carb, satisfying meal combines crispy chicken sausage, spinach, and a creamy sauce made with coconut milk or half-and-half. A comfort dish that’s both healthy and delicious.

Ingredients
- 2 tbsp olive oil for cooking
- 1 package chicken sausage sliced
- 1 bag spinach
- 1 tbsp garlic powder
- 1 tbsp Aglio Olio seasoning or Italian seasoning
- 1 pack cauliflower gnocchi Trader Joe's
- 0 tbsp olive oil if needed for pan cooking
- 2 cups coconut milk or half-and-half
- 1 cup Parmesan cheese
- 2 tbsp cornstarch or flour
- 0 salt to taste
- 0 pepper to taste
- 0 chicken sausage
- 0 spinach
- 0 cauliflower gnocchi
- 0 Parmesan cheese extra for topping
Instructions
- Heat oil in a pan over medium heat. Add sliced chicken sausage and cook for about 8 minutes, flipping to crisp both sides. Add spinach, garlic powder, and seasonings during the last few minutes. Once cooked, remove from the pan and set aside.
- Cook the cauliflower gnocchi using your preferred method. Either air fry at 400°F for 8 minutes or follow the package instructions to cook in the pan that was used for the sausage, using a bit more oil if needed. Set aside with the sausage and spinach.
- In the same pan, add coconut milk, Parmesan cheese, cornstarch (or flour), and seasoning. Whisk to combine and bring to a boil, then reduce heat. Stir frequently for about 5 minutes until the sauce thickens.
- Once the sauce has thickened, return the sausage, spinach, and gnocchi to the pan. Stir to coat everything in the sauce, top with extra Parmesan, and serve!
