Salted Caramel Apple Pie Cookies

Ingredients

  • 3 Apples Chopped, peeled if desired
  • 0.25 cup Brown sugar
  • 2 tbsp Salted butter
  • 2 tbsp Maple syrup
  • 1 tbsp Cornstarch
  • 1 tsp Cinnamon
  • 2 cups All-purpose flour
  • 0.75 tsp Baking powder
  • 0.5 tsp Baking soda
  • 0.5 tsp Cinnamon
  • 0.5 tsp Salt
  • 0.5 cup Salted butter At room temperature
  • 1 cup Powdered sugar
  • 1 Egg At room temperature
  • 0.25 cup Avocado oil
  • 1 tbsp Vanilla extract
  • 0.5 cup Granulated sugar
  • 1 tbsp Cinnamon
  • 3 tbsp Coconut oil
  • 0.25 cup Almond butter Smooth
  • 0.25 cup Maple syrup
  • 3 tbsp Maple syrup
  • 0 pinch Salt

Instructions

  1. Preheat the oven to 350°F. Line two baking sheets with parchment paper; set aside.
  2. Prepare the apple pie filling by melting 2 tbsp of salted butter in a saucepan over medium heat. Add 3 chopped apples, 1/4 cup brown sugar, 2 tbsp maple syrup, 1 tbsp cornstarch, and 1 tsp cinnamon. Heat until the mixture starts to bubble, stir, cover, and cook for 5 minutes until thickened and the apples are soft. Set aside.
  3. In a medium bowl, whisk together 2 cups of all-purpose flour, 3/4 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp cinnamon, and 1/2 tsp of salt.
  4. In a separate large bowl, cream together 1/2 cup of salted butter and 1 cup of powdered sugar until light and fluffy. Add in 1 egg, 1/4 cup avocado oil, and 1 tbsp vanilla extract. Beat until combined.
  5. Combine the wet and dry ingredients, mixing just until combined. Use a large (3 tbsp) cookie scoop to form dough balls. Roll each ball into a circle and coat with a mix of 1/2 cup granulated sugar and 1 tbsp cinnamon.
  6. Place the coated dough balls on the prepared baking sheets. Use a 1/8 measuring cup or the bottom of a small jar to press a circle into the middle of each cookie.
  7. Bake the cookies at 350°F for 8-9 minutes. Remove from the oven, press the measuring cup back into the hole, and bake for another 1-3 minutes until the edges are golden. Allow the cookies to cool.
  8. Prepare the salted caramel by combining 3 tbsp of coconut oil, 1/4 cup smooth almond butter, 1/4 cup plus 3 tbsp maple syrup, and a pinch of salt in a medium bowl. Mix until smooth.
  9. Fill each cookie's center with the apple pie filling. Drizzle with the prepared salted caramel. Enjoy your delicious salted caramel apple pie cookies.
