Chopped Broccoli Salad

A super fresh and crunchy salad that's quick to throw together, featuring raw broccoli, toasted pumpkin seeds, and a creamy dressing.

Chopped Broccoli Salad

Ingredients

  • 1 whole broccoli head
  • 0.5 whole red onion
  • 2.5 whole spring onion
  • 1 bunch parsley
  • 0.5 cup pumpkin seeds
  • 0.5 cup dried cranberries
  • 0.33 cup fried shallots
  • 0.25 cup olive oil
  • 1 whole lemon
  • 0.5 cup Greek yoghurt
  • 1 tbsp honey
  • 0.5 tsp salt
  • 0.5 tsp ground black pepper
  • 1 tsp cumin

Instructions

  1. Chop 1 head of broccoli into small, bite-sized pieces, including both florets and stalks.
  2. Chop ½ red onion into small pieces.
  3. Chop 2 to 3 spring onions finely.
  4. Chop 1 bunch of parsley finely.
  5. Toast ½ cup of pumpkin seeds until golden brown.
  6. Chop ½ cup of dried cranberries into smaller pieces.
  7. Combine the chopped broccoli, red onion, spring onions, parsley, toasted pumpkin seeds, chopped cranberries, and 1/3 cup of fried shallots in a large mixing bowl.
  8. In a separate bowl, whisk together 1/4 cup olive oil, juice of 1 lemon, ½ cup Greek yoghurt, 1 tbsp honey, 1/2 tsp salt, 1/2 tsp ground black pepper, and 1 tsp cumin until well combined.
  9. Pour the dressing over the salad ingredients in the large mixing bowl.
  10. Mix everything together thoroughly until all ingredients are well coated with the dressing.
  11. Taste the salad and adjust the seasoning as desired, adding more salt, pepper, or lemon juice if necessary.
