Christmas Chestnut and Sausage Pasta

Ingredients

  • 150 g pasta
  • 1 white onion diced
  • 2 garlic cloves chopped
  • 2 tsp olive oil
  • 185 g chicken or pork sausage meat approx. 170-200g range
  • 0 white wine optional splash
  • 0.5 tsp rosemary
  • 1 tbsp tomato purée
  • 120 g chestnut mushrooms chopped into rough dice
  • 0 kale 3 handfuls, or use whole leaf spinach
  • 30 g cooked chestnuts roughly chopped
  • 20 g parmesan
  • 1 tbsp light cream cheese

Instructions

  1. Bring a pot of salted water to a boil and cook the pasta until al dente, reserving some pasta water.
  2. Dice the onion and garlic finely and set aside.
  3. In a pan, heat two teaspoons of olive oil and cook the sausage meat, breaking it into small pieces as it browns.
  4. Add the diced onion and garlic to the pan. Sauté everything together for 3-4 minutes until the onion softens and becomes translucent. Add a splash of water or white wine to deglaze.
  5. Stir in the rosemary and tomato purée, cooking for another minute to combine.
  6. Add the mushrooms and cook until softened, then mix in the kale, allowing it to wilt slightly.
  7. Stir in the chopped chestnuts, 20g of parmesan, and the cream cheese, adding a splash of reserved pasta water to create a silky sauce.
  8. Toss the cooked pasta into the pan, mixing well to coat in the sauce. Serve with grated parmesan.
