Creamy Miso Chicken Udon Noodles

Ingredients
- 1 tablespoon sesame oil
- 1 tablespoon green onion sliced
- 1 tablespoon garlic minced
- 0.5 tablespoon miso paste
- 150 grams chicken breast or thighs
- 1 cup water
- 0.5 cup milk substitute water for a lighter version
- 1 serving udon noodles
- 0 dumplings to taste
- 0 enoki mushrooms to taste
- 0 soy sauce to taste
- 1 egg
- 0 sesame oil if desired
- 0 green onion for garnish
Instructions
- Heat a pan on medium heat and add 1 tablespoon of sesame oil. Sauté sliced green onions and minced garlic for about 1 minute, then add in 1/2 tablespoon of miso paste and stir until well combined.
- Toss in 150g of chicken breast or thighs, and stir-fry for about 5-7 minutes until fully cooked.
- Once the chicken is cooked, add 1 cup of water and 1/2 cup of milk. Increase heat to medium-high and let it simmer for 3 minutes.
- Once the soup starts boiling, add 1 serving of udon noodles, dumplings, and enoki mushrooms. Cook until the noodles are tender.
- Add soy sauce, an egg, and a bit of sesame oil if desired. Cook for about a minute, then sprinkle with more green onions and enjoy.
