Creamy Miso Chicken Udon Noodles

Ingredients

  • 1 tablespoon sesame oil
  • 1 tablespoon green onion sliced
  • 1 tablespoon garlic minced
  • 0.5 tablespoon miso paste
  • 150 grams chicken breast or thighs
  • 1 cup water
  • 0.5 cup milk substitute water for a lighter version
  • 1 serving udon noodles
  • 0 dumplings to taste
  • 0 enoki mushrooms to taste
  • 0 soy sauce to taste
  • 1 egg
  • 0 sesame oil if desired
  • 0 green onion for garnish

Instructions

  1. Heat a pan on medium heat and add 1 tablespoon of sesame oil. Sauté sliced green onions and minced garlic for about 1 minute, then add in 1/2 tablespoon of miso paste and stir until well combined.
  2. Toss in 150g of chicken breast or thighs, and stir-fry for about 5-7 minutes until fully cooked.
  3. Once the chicken is cooked, add 1 cup of water and 1/2 cup of milk. Increase heat to medium-high and let it simmer for 3 minutes.
  4. Once the soup starts boiling, add 1 serving of udon noodles, dumplings, and enoki mushrooms. Cook until the noodles are tender.
  5. Add soy sauce, an egg, and a bit of sesame oil if desired. Cook for about a minute, then sprinkle with more green onions and enjoy.
