Creamy Tuscan White Bean and Chicken Sausage Skillet

Ingredients

  • 2 tablespoons butter
  • 0.5 cup onion finely diced
  • 2 cloves garlic minced
  • 1 tablespoon tomato paste
  • 1 pound spicy Italian chicken sausage casings removed
  • 3 leaves kale roughly chopped
  • 0.33 cup sun-dried tomatoes marinated in oil, chopped
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon dried basil
  • 0 salt to taste
  • 0 black pepper to taste
  • 1 cup bone broth
  • 0.25 cup heavy cream
  • 0.25 cup parmesan cheese
  • 0.5 lemon lemon juice juice of
  • 0 fresh parsley optional garnish

Instructions

  1. Heat a large skillet over medium heat. Add the butter and onion. Cook, stirring occasionally, for 4 minutes until the onion is softened and translucent.
  2. Stir in the garlic and tomato paste, then add your chicken sausage. Cook while breaking up the sausage until no longer pink, about 5-7 minutes.
  3. Add roughly chopped kale, sun-dried tomatoes, dried oregano, dried basil, salt, and pepper to taste. Cook for 2 minutes until the kale begins to wilt.
  4. Add the bone broth and heavy cream. Bring the mixture to a simmer and let it simmer for 5-10 minutes to allow the sauce to thicken slightly.
  5. Stir in the parmesan cheese and lemon juice. Mix well and ensure the cheese is melted completely.
  6. Serve and garnish with fresh parsley if desired. Enjoy with toasted bread, or over rice or pasta.
