Creamy Sun-Dried Tomato Chicken Pasta

Ingredients

  • 0 tablespoon oil from sun-dried tomatoes reserved from jar
  • 1 pound chicken breasts
  • 4 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 0.5 teaspoon chili flakes
  • 2 tablespoon butter
  • 1 medium shallot chopped
  • 2 cloves garlic chopped
  • 4 cups water
  • 1 pound short cut pasta
  • 1 cup heavy cream
  • 2 teaspoon Dijon mustard
  • 2 cups fresh baby spinach
  • 8 ounce sun-dried tomatoes
  • 1 whole lemon juice
  • 0.75 cup grated parmesan cheese

Instructions

  1. Heat the oil from the sun-dried tomatoes in a large pot over medium-high heat.
  2. Season the chicken breasts with Italian seasoning, paprika, and chili flakes, then add to the pot.
  3. Cook the chicken until golden brown and cooked through, then remove it from the pot.
  4. Melt the butter in the same pot and add the chopped shallot and garlic, cooking until softened.
  5. Add water to the pot and bring to a boil.
  6. Add the pasta to the boiling water and cook until al dente.
  7. Reduce the heat and stir in the heavy cream, Dijon mustard, spinach, and sun-dried tomatoes.
  8. Stir in the lemon juice, grated parmesan, and return the chicken to the pot. Stir everything together.
  9. Serve the pasta warm, optionally alongside garlic bread.
