Easy 1-Pan Lemon Orzo Pasta With Shrimp
A quick and easy lemon orzo pasta with shrimp, ready in under 30 minutes.

Ingredients
- 1 lb raw shrimp
- 0 to taste salt
- 0 to taste pepper
- 0.5 tsp paprika
- 3 seconds avocado oil spray
- 1 finely minced shallot
- 3 minced garlic cloves
- 1 cup dry orzo pasta
- 2.5 cups lower-sodium chicken or vegetable broth
- 1 zest and juice lemon
- 0.25 cup fat free half n half
- 2 tbsp Parmesan cheese
- 1 chopped asparagus bunch
- 0 chopped parsley
- 0 to taste chili flakes
Instructions
- Season shrimp with salt, pepper, and smoked paprika.
- In a pan, on medium high heat, spray avocado oil then sear the shrimp and cook until golden brown and cooked through, about 2-3 minutes per side. Remove shrimp and set to the side.
- In the same pan, turn heat to medium low, add shallots and minced garlic and sauté until fragrant, about 1-2 minutes.
- Stir in orzo pasta and let it toast for 2-3 minutes, stirring occasionally.
- Gradually add broth to the orzo, stirring often, until the orzo is cooked and creamy, about 10-15 minutes. Add more broth as needed to keep the orzo from sticking.
- Add lemon juice and zest, half n half, Parmesan cheese and the asparagus.
- Garnish with parsley and chili flakes then enjoy.
