Sweet Potato Fajita Bowl
A flavorful bowl featuring sweet potatoes, taco mince, caramelized veggies, and guacamole, perfect for a healthy meal.

Ingredients
- 4 small sweet potatoes
- 1 spray avocado or olive oil
- 0.5 tsp paprika
- 0.5 tsp garlic powder
- 1 to taste salt
- 1 to taste pepper
- 4 small sweet potatoes
- 500 g lean beef mince
- 1 packet taco seasoning
- 1 splash water
- 1 sliced brown onion
- 2 sliced capsicums
- 1 tsp olive oil
- 1 splash water
- 1 tsp brown sugar
- 1 pinch thyme
- 1 pinch paprika
- 1 to taste salt
- 1 to taste pepper
- 1 large avocado
- 1 sprinkle coriander
- 1 squeeze lemon juice
- 0.25 tsp garlic powder
- 1 to taste salt
- 1 to taste pepper
- 4 small sweet potatoes
- 500 g taco mince
- 1 batch caramelized veggies
- 80 g shredded mozzarella
- 1 batch guacamole
- 1 to taste light sour cream or cottage cheese
- 1 sprinkle coriander
Instructions
- Dice 4 small sweet potatoes into cubes and spray with avocado or olive oil. Season with ½ tsp each of paprika and garlic powder, salt, and pepper.
- Air fry the seasoned sweet potatoes at 200°C for 18 minutes, shaking halfway through, until golden.
- Brown 500 g of lean beef mince in a pan over medium-high heat.
- Stir through 1 packet of taco seasoning and a splash of water with the browned beef mince until coated. Remove from heat and set aside.
- In the same pan, sauté 1 sliced brown onion and 2 sliced capsicums with 1 tsp olive oil or spray, a splash of water, and 1 tsp brown sugar over medium-high heat.
- Add a pinch of thyme, paprika, salt, and pepper to the sautéed vegetables. Stir constantly until soft and caramelized.
- Mash 1 large avocado and mix with a sprinkle of coriander, a squeeze of lemon juice, ¼ tsp garlic powder, salt, and pepper to make guacamole.
- Assemble the bowls by layering the sweet potatoes, taco mince, and caramelized veggies.
- Top each bowl with 20 g of shredded mozzarella and melt in the microwave for 30 seconds.
- Add guacamole, a dollop of light sour cream or cottage cheese, and a sprinkle of coriander to each bowl before serving.
