French Onion Chicken with Cauliflower Potato Mash

Ingredients

  • 4 large onions thinly sliced
  • 2 tablespoons olive oil
  • 2 cups cauliflower florets
  • 2 medium potatoes
  • 4 pieces chicken breasts
  • 0 to taste salt
  • 0 to taste black pepper
  • 1 tablespoon herbs mixed dried or fresh
  • 4 slices provolone cheese
  • 4 slices gruyere cheese
  • 2 tablespoons butter
  • 0 to taste salt
  • 0 to taste black pepper

Instructions

  1. Start by thinly slicing 4 large onions and adding them to a pan with some olive oil over medium heat.
  2. Caramelize the onions for about 45 minutes until they are golden brown and sweet.
  3. While the onions cook, prepare the cauliflower potato mash. Boil 2 cups of cauliflower florets and 2 medium potatoes until soft.
  4. Season 4 chicken breasts with salt, pepper, and herbs, then sear them in a separate pan until golden brown.
  5. Top the seared chicken breasts with the caramelized onions and slices of provolone and gruyere cheese. Allow the cheese to melt over the chicken.
  6. Mash the cooked cauliflower and potatoes together with butter, then season with salt and pepper to taste.
  7. Serve the French onion chicken over the bed of cauliflower and potato mash for a cozy meal.
