Maple Roasted Sweet Potatoes with Candied Pecans

Ingredients
- 0 parchment paper
- 3 large sweet potatoes peeled and cubed, 1-inch pieces
- 2 tbsp olive oil
- 0.25 cup maple syrup
- 0.5 tsp ground cinnamon
- 0 salt
- 0 black pepper
- 0 baking sheet
- 0.5 cup candied pecans chopped
- 2 tbsp fresh parsley chopped (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Peel and cube the sweet potatoes into 1-inch pieces. In a large bowl, toss them with olive oil, maple syrup, cinnamon, salt, and pepper.
- Spread the seasoned sweet potatoes on the prepared baking sheet in a single layer. Roast in the oven for 25-30 minutes, flipping halfway, until they are golden brown and tender.
- Roughly chop the candied pecans while the sweet potatoes are roasting.
- Once the sweet potatoes are done, transfer them to a serving dish. Toss with the candied pecans and garnish with fresh parsley before serving.
