Maple Roasted Sweet Potatoes with Candied Pecans

Ingredients

  • 0 parchment paper
  • 3 large sweet potatoes peeled and cubed, 1-inch pieces
  • 2 tbsp olive oil
  • 0.25 cup maple syrup
  • 0.5 tsp ground cinnamon
  • 0 salt
  • 0 black pepper
  • 0 baking sheet
  • 0.5 cup candied pecans chopped
  • 2 tbsp fresh parsley chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Peel and cube the sweet potatoes into 1-inch pieces. In a large bowl, toss them with olive oil, maple syrup, cinnamon, salt, and pepper.
  3. Spread the seasoned sweet potatoes on the prepared baking sheet in a single layer. Roast in the oven for 25-30 minutes, flipping halfway, until they are golden brown and tender.
  4. Roughly chop the candied pecans while the sweet potatoes are roasting.
  5. Once the sweet potatoes are done, transfer them to a serving dish. Toss with the candied pecans and garnish with fresh parsley before serving.
