Bodega Chopped Cheese

Bodega Chopped Cheese

Ingredients

  • 2 pcs fresh jalapeno chilies sliced into thin rounds
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons white sugar
  • 1 teaspoon sea salt
  • 18 oz ground beef
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon brown sugar
  • 1 tablespoon olive oil
  • 0.5 onion
  • 4 slices American cheese
  • 2 pcs hero or crusty rolls
  • 0 mayonnaise
  • 0 ketchup
  • 0.25 head iceberg lettuce
  • 6 pcs plum tomatoes

Instructions

  1. Prepare pickled jalapenos by combining sliced fresh jalapeno chilies, apple cider vinegar, white sugar, and sea salt in a small bowl. Set aside for 10 minutes to pickle.
  2. In a large bowl, combine ground beef with smoked paprika, garlic powder, onion powder, brown sugar, salt, and pepper. Mix thoroughly and shape into four equal patties.
  3. Heat 1 tablespoon of olive oil in a large frying pan over high heat. Add two beef patties and half the sliced onion. Flatten the patties slightly with a spatula. Cook for 2 minutes until well browned, then flip and toss the onions. Cook for another 2 minutes. Vigorously chop up the patties and onions while mixing in half the cheese slices until the cheese melts.
  4. Toast two hero or crusty rolls until almost crisp. Spread generously with mayonnaise on both cut sides and ketchup on the bottom half.
  5. Assemble the sandwich by dividing the chopped beef and cheese mixture among the toasted rolls. Top with shredded lettuce, sliced plum tomatoes, and pickled jalapenos. Drizzle with a small amount of the pickling liquid.
